Cranberry Orange Scones

WHAT YOU NEED

  • 4 cups blanched almond meal
  • 1/2 teaspoon sea salt
  • 1 1/2 teaspoon baking soda
  • 1 cup dried cranberries
  • 2 eggs
  • 2-3 tablespoons honey or maple syrup
  • 1 teaspoon orange oil

HOW TO PREPARE

  • In one bowl mix dry ingredients
  • In another bowl mix wet ingredients
  • Mix wet and dry ingredients together
  • Using your hands form dough into scone shaped balls (or other shape)
  • Place scones on a parchment paper lined baking sheet
  • Bake at 375 degrees, until golden brown
  • Serve when cool

Blueberry Lemon Scones

  • 4 cups blanched almond meal
  • 1/2 teaspoon sea salt
  • 1 1/2 teaspoon baking soda
  • 1 cup fresh or frozen bluberries
  • 2 eggs
  • 2-3 tablespoons honey or maple syrup
  • Juice from one small lemon plus 1 teaspoon lemon zest

Prepare as instructed above.
