Coconut Cabbage

WHAT YOU NEED

  • One head of green cabbage
  • 1/4 cup coconut oil
  • Sea salt

HOW TO PREPARE

  • Preheat oven to 375
  • Peel off the outer leaves of the cabbage
  • Cut the cabbage in half
  • Place the flat side of the cabbage on your cutting board and slice in 1/4 inch wedges
  • Cut both halves
  • Melt coconut oil
  • Spread the cabbage flat on a baking sheet
  • Drizzle the cabbage with the coconut oil
  • Using your hands rub the coconut oil on the cabbage
  • Sprinkle with sea salt
  • Place baking sheet in over and bake until cabbage begins to turn golden brown
  • Remove and enjoy! Tastes great with a side of breakfast sausage

 

Zucchini Porridge 

WHAT YOU NEED

  • Several zucchini’s
  • Ghee, butter or coconut oil
  • Sea salt

HOW TO PREPARE

  • Wash and slice the zucchini
  • Steam the zucchini until they are soft. We use a steamer basket in a large soup pot.
  • Using a hand blender or a fork mash the zucchini until it is well blended and there are no longer large pieces.
  • Mix in ghee, butter, or coconut oil (your choice) to taste,
  • Add sea salt to taste.
  • Serve
